Confession: my kids have decided pancakes aren't a breakfast food anymore — they're a lifestyle. They want them for breakfast, they want them disguised as a snack at 4pm, and last week one of them asked, with a completely straight face, if pancakes could be a "dinner topping." We're past negotiating at this point.
So when one of our baristas dreamed up a Blueberry Pancake Latte that genuinely tastes like a stack of pancakes in a cup, I took it as a sign from the universe and turned the idea into a snack we could make at home, too.
Here's the thing about the mornings (and afternoons, and that weird 4pm slump) at our house: they're rarely the slow, golden-light, everyone's-happy kind you see online. Usually someone's missing a shoe, lunches aren't packed, and the dog got into someone's plate. Again. On those days I don't need fancy. I need something fast, a little sweet, and just special enough that the kids feel like it was made for them — even if it took less time than finding the matching shoe.
That's exactly what these Blueberry Pancake Bites are: a five-minute, no-stress snack that tastes like a slow Saturday morning, even on a Tuesday.
Blueberry Pancake Bites
Makes: about 18–20 bites Prep: 5 minutes Cook: 8 minutes (or skip the oven entirely — see the Tuesday Shortcut below)
Ingredients
1 cup all-purpose flour
1 tbsp sugar
1 tsp baking powder
pinch of salt
¾ cup milk
1 egg
1 tbsp butter, melted (plus 2 tbsp more for the topping)
½ cup fresh or frozen blueberries (if frozen, toss in straight from the freezer — don't thaw)
2 tbsp real maple syrup
1 tsp cinnamon
Steps
Preheat the oven to 375°F and grease a mini muffin tin.
Whisk the flour, sugar, baking powder, and salt in a bowl. Add the milk, egg, and 1 tbsp melted butter, and stir until just combined — a few lumps are fine, don't overmix. Gently fold in the blueberries.
Spoon the batter into the mini muffin cups, filling each about two-thirds full.
Bake 8–10 minutes, until puffed and a toothpick comes out clean.
While they bake, stir together the remaining 2 tbsp melted butter, maple syrup, and cinnamon in a small bowl.
The moment the bites come out of the oven, brush them with the warm maple-cinnamon butter (or toss them right in the bowl). This step is what makes them taste like a stack of pancakes instead of a muffin — don't skip it.
Serve warm, with extra syrup on the side for dipping. Mine treat it like a dipping sauce buffet.
The Tuesday Shortcut
Already have leftover pancakes in the fridge? Skip the batter entirely. Cut them into bite-sized pieces, toss in the maple-cinnamon butter, and warm in a skillet over medium heat for 2–3 minutes until the edges turn a little golden and crispy. Five minutes, zero dishes beyond one skillet, and the kids never know the difference.
Storage: Keeps in the fridge up to 3 days. Reheat in the toaster oven or air fryer for about 2 minutes to bring back the crispy edges — the microwave works too, just skip the "crispy" part.
